Place the halibut on a large parchment paper, rub salt and pepper. Add lemon slices on top of the fish. Sprinkle olive oil. Place olives, tomatoes, parsley, and garlic on top of the fish and around.
Close the fish in parchment paper and bake it at 350° F. in a preheated oven for 15 minutes. Serve.
Baked Halibut and Kalamata Olives (serves 2)
• Two, 8-ounces of halibut fillet (16 ounces, total)
• salt, pepper or red pepper to taste
• 4 slices fresh lemon
• 2 Tbsp EVOO
• ½ cup kalamata olives
• ½ cup halved cherry tomatoes
• ½ cup fresh parsley, chopped
• 1 garlic clove, minced
